Thornback ray
Raja clavata
Also known as: Roker, Skate
Overview
Thornback ray sustainability varies. Avoid thornback ray caught in the West of Scotland and Western English Channel where there’s too many being caught. Many skate and ray species are unsustainable, and because most products are simply labelled as ‘skate wing’, it’s important to know which species you’re buying. If you don’t know the species you’re buying, it’s best to avoid eating it. Skate wings are sold in UK supermarkets, fishmongers, and seafood restaurants.
