Overview

Sturgeon is used to produce caviar, and its sustainability varies. Farmed sturgeon caviar is considered the Best Choice and is most commonly found in high-end supermarkets and restaurants. All wild-caught sturgeon are Fish to Avoid, as populations are critically low and the high value of wild caviar drives significant illegal fishing. Sturgeon meat is very rare in the UK market due to sustainability concerns.
